Take 1 kg of pork ribs and cut them into small, individual pieces.

Place the cut pork ribs in a pot and boil them for 15 minutes.

After boiling, drain the ribs thoroughly and set them aside in a mixing bowl.

To the boiled ribs in the mixing bowl, add 1 tablespoon of salt, 1 tablespoon of black pepper, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, 1 teaspoon of paprika, and 1 teaspoon of chili powder.

Mix all the ingredients thoroughly until each rib piece is completely coated with the seasoning mixture.

In a separate bowl, combine 1 cup of cornstarch, 1/2 cup of all purpose flour, 1 egg, and 1/2 cup of water.

Whisk or mix these ingredients until a smooth, consistent batter is formed.

Take each marinated pork rib piece and first dip it into the prepared wet batter, ensuring it's fully covered.

Next, transfer the wet-battered rib to a plate of dry cornstarch and coat it completely.

Heat a sufficient amount of oil in a deep pan for deep frying.

Carefully place the coated ribs into the hot oil and deep fry them until they turn golden brown and become crispy.

Once fried, remove the ribs from the oil and set them aside.

In a clean pan, add a small amount of cooking oil.

Add 2 cloves of minced garlic and sauté until fragrant.

Add 1 sliced green chili and 1 sliced red chili to the pan.

Stir in 1 tablespoon of sesame oil, 2 tablespoons of soy sauce, 2 tablespoons of oyster sauce, and 1 tablespoon of sugar.

Mix continuously until the sauce starts to thicken slightly.

Add the previously deep-fried ribs into the pan with the prepared sauce.

Toss the ribs gently until they are thoroughly coated with the sauce.

Transfer the coated ribs to a serving dish.

Garnish generously with sliced spring onion.

Serve immediately and enjoy your Salt and Pepper Ribs.
