In a medium mixing bowl, flake the drained canned tuna with a fork. Add the diced red onion, chopped spring onions, diced cornichons, and chopped fresh parsley.

Add the mayonnaise, grainy mustard, and tangy hot sauce to the tuna mixture. Mix thoroughly with a fork until all ingredients are well combined. Taste and season with salt as desired, then mix again.

Stir in the grated cheddar cheese until it is evenly distributed throughout the tuna mixture.

Take two slices of sourdough bread for each sandwich. Liberally butter one side of each slice of bread. This buttered side will be the outside of your sandwich.

Spoon a generous amount of the prepared tuna filling onto the unbuttered side of one slice of sourdough bread, spreading it evenly to the edges. Place the second slice of buttered sourdough bread on top, with the buttered side facing outwards.

Heat a large skillet or frying pan over low heat. Once warm, carefully place the assembled tuna melt into the pan. Cover the pan with a lid to help the cheese melt and the sandwich heat through.

Cook for 3-5 minutes, or until the bottom side is golden brown and crisp. Carefully flip the sandwich to cook the other side. Cover with the lid again and cook for another 3-5 minutes, or until the second side is golden brown and crisp and the cheese is melted and gooey.

Remove the tuna melt from the pan. Serve immediately with a bag of your favorite crisps and an optional pickled gherkin on the side. For easier eating, cut the tuna melt in half diagonally.
