Roughly chop the 10-12 green bird's eye chilies. The size of the chop doesn't need to be precise as they will be blended.

Place the roughly chopped green bird's eye chilies and the 4-5 cloves of garlic into a food processor or blender.

Add 1/4 cup of fish sauce to the blender with the chilies and garlic.

Pour 1/4 cup of fresh lime juice into the blender.

Add 2 tablespoons of sugar to the blender. This will balance the spicy and sour flavors.

Add 1/4 cup of fresh cilantro to the blender. You can roughly chop it beforehand if desired, but it's not strictly necessary.

Secure the lid on the food processor or blender and blend all the ingredients until a smooth sauce is formed. Scrape down the sides as needed to ensure everything is well combined.

Carefully pour the freshly blended Thai Seafood Sauce into a serving bowl.

Serve this vibrant and spicy sauce immediately as a dipping sauce for grilled prawns, calamari, or other seafood, or drizzle it generously over freshly steamed fish.
