To make the deep plum syrup: Combine the pitted and sliced plums, granulated sugar, 1/2 cup water, and 1 tablespoon fresh lemon juice in a medium saucepan. Bring to a simmer over medium heat, stirring occasionally until the sugar dissolves.

Reduce the heat to low, cover the saucepan, and simmer for 15-20 minutes, or until the plums are very soft and easily mashed. Remove from heat.

Mash the cooked plums with a potato masher or fork until your desired consistency is reached. For a smoother syrup, you can press it through a fine-mesh sieve. Let the deep plum syrup cool completely, then refrigerate until chilled.

Once the plum syrup is chilled, combine the mixed berries, 2 cups cold water, 1/4 cup fresh lemon juice, honey (or maple syrup), and the cooled deep plum syrup in a high-speed blender. Blend until the mixture is completely smooth and no berry chunks remain.

Taste the berry and plum mixture. If you prefer it sweeter, add another tablespoon or two of honey. If you desire more tartness, add an additional teaspoon of lemon juice. Blend briefly to incorporate.

Add the ice cubes to the blender with the berry and plum mixture. Blend again until the ice is fully crushed and the refresher has a slushy, frothy consistency.

Divide the deep plum and mixed berry refresher evenly among 4 serving glasses.

If desired, top each glass with a splash of sparkling water or club soda for an extra fizz. Stir gently.

Garnish each serving with a fresh mint sprig and a few extra mixed berries. Serve immediately and enjoy this refreshing beverage!
