In a large pot, combine the rinsed kidney beans with 4 cups of water. Bring to a boil, then reduce heat and simmer until the beans are tender, about 45-60 minutes. Do not drain the bean water; reserve it for later use.

In a separate large pot or Dutch oven, heat the avocado oil over medium heat. Add the epis and sauté for 2 minutes until fragrant.

Add the cooked kidney beans (without the reserved water yet) to the pot with the epis and sauté lightly for 3-5 minutes, allowing them to absorb some of the flavors.

Stir in the unsweetened coconut cream.

Pour in the reserved bean water from Step 1. Add the onion powder, garlic powder, black pepper, ground cloves, whole habanero pepper, chicken bouillon powder, and Creole seasoning. Stir well to combine.

Bring the mixture to a rolling boil. Once boiling, add the rinsed long grain white rice, spreading it evenly across the pot. Ensure the liquid covers the rice.

Reduce the heat to medium-low and let the water cook down until it is just at the level of the rice, and small craters appear on the surface. This should take about 10-12 minutes.

Once the water has evaporated to the rice level, gently fold the rice from the bottom to the top a few times. Do not mix vigorously, as this can make the rice starchy. Remove the habanero pepper if you prefer less heat.

Cover the pot tightly with a lid and reduce the heat to the lowest setting. Let the rice cook undisturbed for 20-25 minutes, or until all the liquid is absorbed and the rice is tender.

Fluff the rice gently with a fork before serving. Be careful not to mash the beans.
