Take the whole head of cabbage and chop it into bite-sized pieces. Place all of the chopped cabbage into a large mixing bowl.

Add the salt, minced garlic, sesame seeds, and chopped salted kelp over the chopped cabbage in the bowl.

Drizzle the sesame oil over all the ingredients in the bowl, then season with ground black pepper.

Using your clean hands, thoroughly massage all the ingredients into the cabbage. Continue massaging for 5-7 minutes, or until the cabbage softens significantly and is well-coated with the seasonings.

Serve the Yamitsuki Shio Kyabetsu immediately as a side dish. (Tip: Ensure a couple of windows are open first, as the dish can have a strong aroma.)
