Preheat your oven to 180°C (350°F).

Cook the nduja: In a large pan, cook the 200g nduja in 1 tablespoon of olive oil over medium heat. Break up the nduja as it cooks. Once it is crispy, remove it from the pan with a slotted spoon and set it aside, reserving the rendered fat in the pan.

Sauté aromatics: In the same pan with the reserved nduja fat, add the chopped 1 onion and cook until softened, about 5-7 minutes. Then, add the 2 minced cloves garlic, 1 teaspoon smoked paprika, and 1/2 teaspoon cayenne pepper. Cook for another minute until fragrant, stirring constantly.

Make the roux: Add 50g butter to the pan and let it melt. Stir in 50g flour and cook for 1-2 minutes, whisking constantly, to create a roux.

Create the cheese sauce: Gradually whisk in 700ml milk until the sauce thickens and is smooth. Stir in 1 teaspoon Dijon mustard. Add 150g grated Parmesan and 200g grated Cheddar cheese. Stir until all the cheese has melted and the sauce is creamy. Season with salt and pepper to taste.

Cook the macaroni: While the sauce is cooking, prepare the macaroni. Cook 200g macaroni according to package instructions until al dente, then drain thoroughly.

Combine and bake: Add the cooked macaroni to the cheese sauce and stir to combine thoroughly. Pour half of the macaroni mixture into an oven-safe dish. Sprinkle half of the cooked nduja on top. Pour the remaining macaroni mixture over the nduja. Sprinkle the remaining nduja on top. Optionally, top with breadcrumbs for extra crunch.

Bake at 180°C (350°F) for 20-25 minutes or until golden and bubbly.
