Place the cubed potatoes and apples into a large pot. Add cold water to cover them by about 1 inch, then add 1 teaspoon of salt. Bring to a boil over high heat, then reduce heat to medium and simmer until the potatoes and apples are very soft, about 15-20 minutes. Drain thoroughly in a colander and let them steam dry for 5 minutes.

While the potatoes and apples are cooking, melt 2 tablespoons of butter in a separate medium pan over medium-low heat. Add the sliced onion and stir to coat all pieces in the butter and separate them. Cover the pan and cook for 10 minutes, stirring every 3-4 minutes to prevent sticking and scrape any browned bits.

Uncover the pan, add 1/4 teaspoon of salt to the onions, and continue cooking uncovered over medium-low heat, stirring frequently, until the onions are deeply caramelized and very soft, about 15-20 minutes. Keep warm.

Return the steamed potatoes and apples to the pot. Add 3 tablespoons of butter, 1/4 teaspoon of salt, the white pepper, and freshly grated nutmeg. Mash the mixture with a potato masher until it reaches a 'chunkier' consistency, leaving some small pieces for texture. Mix well to combine the seasonings.

To serve, plate a generous portion of the mashed potato and apple mixture. Create a small well in the center and top with a spoonful of the caramelized onions. Melt the remaining 1 tablespoon of butter and drizzle it over the top of each serving.
