Preheat your oven to 400°F. Ensure your broccoli florets are cut into small, even pieces for faster and more consistent roasting.

In a large oven-safe dish, combine the prepared broccoli, quartered yellow onion, garlic cloves, and feta cheese. Drizzle with 1 to 2 tablespoons of olive oil. Season with dried oregano, chili flakes, salt, and black pepper. Toss everything to coat evenly.

Roast the vegetable mixture in the preheated oven for 35 to 40 minutes, or until the broccoli is tender and slightly charred. Cooking times may vary depending on your oven, so keep an eye on it to prevent over-browning.

Once roasted, carefully transfer the hot vegetables and feta to a high-speed blender. Add the bone broth, cottage cheese, baby spinach, lemon zest, lemon juice, and the rinsed and drained cannellini beans.

Blend the mixture until it is completely smooth and creamy. If the soup is too thick for your preference, add a small amount of water (1/4 cup at a time) and blend again until the desired consistency is reached.

Pour the blended soup into a saucepan and gently warm it over medium-low heat until heated through. Do not boil.

Ladle the hot soup into bowls. Garnish each serving with fresh dill, a pinch of chili flakes, and finely shredded Manchego or Parmesan cheese, if desired, to enhance the flavors.
