Cut the vanilla pods into small pieces. You can slice them lengthwise first, then chop them into smaller segments.

Add the chopped vanilla pods to a blender. Add the 200 grams of organic sugar to the blender and pulse briefly to combine the vanilla pods and sugar.

Pour in 500-700 ml of water (adjusting the amount for your desired consistency). Blend the mixture for 5-8 minutes. During this blending process, stop occasionally to scrape down the sides of the blender to ensure everything blends smoothly and thoroughly.

Transfer the blended mixture from the blender to a pan. Cook the mixture on low to medium heat for 30-45 minutes, stirring occasionally, until it thickens into a paste consistency.

Let the mixture cool slightly. Once cooled, add the 50 ml of honey and mix well until the paste is smooth and thick.

Transfer the finished vanilla bean paste to an airtight container and store it in the fridge.
