Preheat your oven to 350°F (175°C). In a large skillet or Dutch oven, fry the chopped bacon over medium heat until it's about halfway cooked and starting to get crispy on the edges. Do not drain the bacon grease.
Add the chopped yellow onion to the skillet with the bacon and continue to cook, stirring occasionally, until the onions are softened and translucent, about 5-7 minutes.

Stir in the two cans of cream of mushroom soup, the packet of onion soup mix, garlic powder, onion powder, and black pepper. Mix well to combine.

Pour in the milk, then add 1 1/2 cups of shredded sharp cheddar cheese and 1 cup of French fried onions. Stir until the cheese is mostly melted and everything is well incorporated.

Transfer the entire mixture into an aluminum baking pan or a 9x13 inch baking dish. Bake in the preheated oven for 30 minutes.

Remove the casserole from the oven. Sprinkle the remaining 1/2 cup of shredded sharp cheddar cheese and 1/2 cup of French fried onions evenly over the top. Return to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly and the French fried onions are golden brown.
