Pat the steak pieces dry with paper towels. Season generously with salt and black pepper, ensuring all sides are coated.

Heat the olive oil in a large skillet or cast-iron pan over medium-high heat until shimmering. Ensure the pan is very hot before adding the steak.

Add half of the steak pieces to the hot skillet in a single layer, making sure not to overcrowd the pan. Sear for 2-3 minutes per side, until a deep brown crust forms. The internal temperature should be around 130-135°F for medium-rare.

Remove the seared steak to a clean plate and repeat with the remaining steak pieces. Once all steak is seared, set aside.

Reduce the heat to medium-low. Add the unsalted butter to the same skillet, allowing it to melt. Once melted, add the minced garlic and red pepper flakes (if using). Sauté for 1 minute until fragrant, being careful not to burn the garlic.

Return all the seared steak bites to the skillet. Add the chopped fresh parsley. Toss the steak bites gently with tongs to coat them evenly in the garlic butter sauce. Cook for another 1-2 minutes, allowing the flavors to meld and the steak to warm through.

Remove from heat and serve immediately. These steak bites are delicious on their own or with a low-carb side dish.
