Preheat your oven to 190°C (375°F). Line a baking tray with parchment paper or lightly grease a loaf pan.

In a large bowl, combine all the meatloaf ingredients: ground chicken, 1/2 cup grated Parmesan cheese, 1/2 cup breadcrumbs, 1 egg, 3-4 cloves minced garlic, 1/4 cup milk, 2 tablespoons olive oil or melted butter, 1 teaspoon Italian seasoning, 1/2 teaspoon paprika, 1/2 teaspoon onion powder, salt, black pepper, and the optional 2 tablespoons chopped fresh parsley. Mix gently just until combined, being careful not to overwork the mixture.

Divide the meatloaf mixture into four equal portions and form them into mini loaves. Alternatively, you can form one large loaf. Place the shaped loaves on the prepared baking tray.

In a small bowl, prepare the garlic Parmesan topping by combining the 2 tablespoons melted butter, 2 tablespoons grated Parmesan cheese, and 1 clove finely grated garlic. Brush this topping evenly over the top of each meatloaf.

Bake the mini loaves for 22–25 minutes, or if making one large loaf, bake for 35–40 minutes. The meatloaves are done when their internal temperature reaches 74°C (165°F).

Once baked, remove the meatloaves from the oven and let them rest for 5 minutes before serving. This allows the juices to redistribute, resulting in a more tender and flavorful meatloaf.
