In a large mixing bowl, mash the 3 ripe bananas thoroughly with a fork or potato masher until mostly smooth with a few small lumps remaining.

To the mashed bananas, add the 1/2 cup of brown sugar, 1 egg, 1 teaspoon of vanilla extract, 1/4 cup of milk, and 2 tablespoons of melted butter.

Mix the wet ingredients well with a whisk or spatula until they are fully combined and smooth.

In a separate medium bowl, whisk together the 1 cup of all-purpose flour, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, 1/2 teaspoon of cinnamon powder, and a pinch of salt.

Add the dry ingredients to the wet banana mixture. Mix gently with a spatula or spoon until the ingredients are just combined. Be careful not to overmix, as this can lead to tough pancakes; a few lumps are perfectly fine.

Heat a large non-stick pan or griddle over medium heat. Add about 1/2 tablespoon of butter to the pan and allow it to melt and coat the surface.

Pour small dollops of batter (about 1/4 cup each) onto the hot pan to form individual pancakes, leaving some space between them.

Cook the pancakes for 2-3 minutes, or until bubbles begin to form on the surface and the edges look set.

Carefully flip the pancakes with a spatula and cook for another 1-2 minutes, or until they are golden brown on the other side and cooked through.

Repeat with the remaining batter, adding more butter to the pan as needed for each batch. Serve the banana bread pancakes immediately, topped with fresh sliced bananas and a generous drizzle of maple syrup.
