Preheat your oven to 180°C (350°F). Line a 9x5 inch loaf pan with parchment paper, leaving an overhang on the sides to easily lift the bread out later.

In a large bowl, mash the 3 ripe bananas until smooth. A fork works well for this.

Add the 100g melted unsalted butter, 100g light brown sugar, 50g granulated sugar, 1 large egg, and 1 teaspoon vanilla extract to the mashed bananas. Whisk these ingredients together until well combined and smooth.

Sift the 150g all-purpose flour, 50g unsweetened cocoa powder, 1 teaspoon baking soda, and 1/2 teaspoon salt directly into the wet ingredient mixture. Sifting helps to prevent lumps and aerate the dry ingredients.

Using a spatula, gently fold in the 150g chopped dark chocolate or chocolate chips until just combined. Be careful not to overmix the batter, as this can lead to a tough banana bread.

Pour the batter into the prepared 9x5 inch loaf pan.

If desired, sprinkle more chocolate chips on top of the batter in the loaf pan for an extra chocolatey crust.

Bake the banana bread in the preheated oven at 180°C (350°F) for 50-60 minutes, or until a wooden skewer inserted into the center comes out with moist crumbs, but no wet batter. The top should be set and spring back when lightly touched.

Once baked, remove the banana bread from the oven and let it cool in the pan for about 10-15 minutes before carefully lifting it out using the parchment paper overhang. Transfer it to a wire rack to cool completely before slicing and enjoying.
