Add 1 tablespoon of olive oil to a large pot over medium heat. Add the diced 1/2 yellow onion and sauté until it becomes translucent, about 3-5 minutes.

Add the 2 cloves of minced garlic to the pot and sauté for 1 minute until fragrant.

Pour in 1 cup of spicy arrabiata pasta sauce, 1/2 cup of heavy cream, and 1/2 cup of chicken broth. Add the 1 cup of halved cherry tomatoes. Stir everything together to combine.

Add 1/2 pound of penne pasta to the pot. Season with salt and pepper to taste, and add red pepper flakes if desired. Stir again to ensure all ingredients are well mixed and the pasta is submerged in the liquid.

Cover the pot and bring the mixture to a boil. Once boiling, reduce the heat to medium-low and let it simmer for 15-20 minutes, or until the pasta is al dente. Stir occasionally during this time to prevent sticking. If the sauce becomes too thick, add a splash of milk or broth.

Remove the lid from the pot. Add the 1/2 block of garlic & herb Boursin cheese to the pasta. Stir until the cheese is completely melted and the sauce is creamy and well combined.

Garnish the pasta with fresh chopped parsley before serving.
