Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides to easily lift the bars out later.

In a large mixing bowl, combine the brown sugar, granulated sugar, and softened butter. Mix thoroughly with a spoon or electric mixer until the mixture is light and fluffy.

Add the egg and vanilla extract to the wet mixture. Mix until well combined and smooth.

In a separate medium bowl, whisk together the all-purpose flour, baking soda, and salt.

Gradually add the dry ingredients from the medium bowl to the wet ingredients in the large bowl. Mix until a soft cookie dough forms. Be careful not to overmix.

Stir in the chocolate chips into the cookie dough until evenly distributed.

Arrange the graham cracker sheets in a single layer to cover the bottom of the prepared baking pan. Break them as needed to fit.

Take about half of the cookie dough and carefully spread it evenly over the layer of graham crackers. You can use your hands or a spatula, pressing it gently into place.

Place a generous layer of marshmallows on top of the cookie dough. Ensure they are spread out evenly.

Break the chocolate bars into pieces and arrange them on top of the marshmallows.

Carefully place the remaining cookie dough on top of the chocolate and marshmallows. Gently spread it to cover the filling, trying to seal the edges as much as possible.

Place additional broken chocolate bar pieces on top of the final layer of cookie dough for extra chocolatey goodness.

Bake in the preheated oven for 30 minutes, or until the top is golden brown and the edges are set. The marshmallows and chocolate inside will be gooey.

Once baked, remove the pan from the oven. Let the S'mores Cookie Bars cool in the pan for at least 15-20 minutes before lifting them out using the parchment paper overhang. This allows them to set slightly.

Cut the S'mores Cookie Bars into squares and serve warm or at room temperature. Enjoy!
