In a large bowl or resealable bag, combine the ranchera or diesmillo and short ribs. Add the juice from the oranges and limes, chopped cilantro, chopped white onion, grated garlic, soy sauce, neutral oil, oregano, chili powder, paprika, cumin, salt, and pepper. Pour in enough Mexican beer to just cover the meat, typically 1 to 1 1/2 cups.

Mix all ingredients thoroughly, ensuring the meat is well coated. Cover the bowl or seal the bag and marinate in the refrigerator for at least 6 hours, or preferably overnight for best flavor.

When ready to cook, preheat your grill to high heat for at least 20-30 minutes.

While the grill is preheating, clean the grill grates thoroughly with a grill brush. Then, rub the grates with the cut side of half an onion to further clean and season them. Finally, wipe down with a paper towel (be careful if the grill is already hot).

Remove the meat from the marinade, allowing any excess liquid to drip off. Place the marinated meat directly on the hot grill.

Cook the meat on high heat for about 2-3 minutes per side. Carne asada cooks quickly, so keep a close eye on it. Avoid opening the grill too frequently to retain heat.

Once cooked to your desired doneness, remove the carne asada from the grill and transfer it to a cutting board. Let the meat rest for at least 10 minutes before slicing against the grain.

Serve the sliced carne asada with your favorite accompaniments, such as warm tortillas, salsa, guacamole, or rice and beans.
