Add the cold leftover rice to the pan with the kimchi and onion mixture. Break up any clumps of rice with your spatula. Stir and fry the rice mixture, ensuring all ingredients are well combined and the rice is heated through and infused with the kimchi flavor. Continue frying for 5-7 minutes.

Return the cooked Spam to the pan with the fried rice mixture. Stir everything together to evenly distribute the Spam throughout the rice.

While the fried rice is finishing, heat a separate small non-stick pan over medium heat. Drizzle 1 tablespoon of cooking oil into the pan. Crack the eggs into the pan and fry them to your desired doneness (sunny-side up with a runny yolk is recommended). Sprinkle with sesame seeds while cooking.

Carefully place one fried egg on top of each serving of the prepared Spam kimchi fried rice.

Garnish the dish by sprinkling crumbled roasted seaweed and the chopped green parts of the green onion over the top of each serving. Serve immediately and enjoy breaking the runny yolk into the rice.
