While the pasta cooks, prepare the salmon. In a medium bowl, toss the cubed salmon with olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper until evenly coated.

Heat a large skillet or Dutch oven over medium-high heat. Add the seasoned salmon in a single layer and cook for 2-3 minutes per side, or until lightly browned and cooked through. Remove the salmon from the skillet and set aside.

In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for 1 minute until fragrant, being careful not to burn it.

Whisk in the all-purpose flour and cook for 1 minute, stirring constantly, to create a roux.

Gradually whisk in the heavy cream and chicken broth until smooth. Bring the mixture to a gentle simmer, stirring occasionally, and cook for 3-5 minutes until the sauce begins to thicken.

Reduce the heat to low. Stir in the Parmesan cheese and pepper jack cheese until melted and the sauce is smooth and creamy. Season with salt and black pepper to taste. If the sauce is too thick, add a splash of the reserved pasta water until desired consistency is reached.

Add the cooked fettuccine to the sauce and toss to coat evenly. Gently fold in the cooked salmon cubes.

Serve immediately, garnished with fresh chopped parsley.
