Preheat your oven to 400°F. Lightly oil a round glass baking dish large enough to hold the bell pepper halves.

Prepare the bell peppers by halving them lengthwise and removing the seeds. Place the bell pepper halves, cut-side up, into the prepared baking dish.

In a medium bowl, season the peeled and deveined shrimp with 1 tablespoon of olive oil, 1/2 teaspoon of kosher salt, 1/2 teaspoon of black pepper, and 1/2 teaspoon of smoked paprika. Toss to coat evenly.

In another bowl, whisk together all the herb scampi sauce ingredients: 6 tablespoons of melted butter, 3 tablespoons of olive oil, 6 minced garlic cloves, 1/2 cup of dry white wine, 1 tablespoon of lemon juice, the zest of 1 lemon, 1 1/2 teaspoons of crushed red pepper flakes, 1 tablespoon of Dijon mustard, 1 tablespoon of chopped fresh parsley, 1 tablespoon of chopped fresh basil, 1 tablespoon of sliced chives, 1 teaspoon of dried oregano, 1/2 teaspoon of onion powder, 1/2 teaspoon of Old Bay seasoning, and a pinch of sugar.

Pour a thin layer of the scampi sauce into the bottom of each bell pepper half. Arrange the seasoned shrimp in a spiral within each pepper half, tucking each one under the next.

Pour the remaining scampi sauce evenly over the shrimp in each bell pepper.

In a separate bowl, mix all the breadcrumb crumble ingredients together: 1 cup of breadcrumbs, 2 tablespoons of olive oil, 1 tablespoon of lemon-infused olive oil, 2 tablespoons of melted butter, 2 grated garlic cloves, 2 tablespoons of chopped fresh parsley, 1/4 teaspoon of salt, and 1/4 cup of Parmesan cheese.

Sprinkle a thin layer of extra Parmesan cheese over the shrimp in each bell pepper. Then, evenly distribute the breadcrumb mixture on top of the Parmesan layer.

Bake for 12–15 minutes, or until the shrimp are cooked through, the breadcrumbs are golden brown, and the sauce is bubbly.

Carefully remove the stuffed peppers from the oven. Spoon any extra sauce from the bottom of the peppers over the top of the shrimp and garnish with additional fresh herbs, if desired, before serving.
