Preheat the oven to 425°F and line a cookie sheet with parchment paper.

In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

Add the softened butter and brown sugar to the dry ingredients. Using an electric mixer, beat the mixture until it resembles coarse crumbs.

Pour in the heavy whipping cream, honey, vanilla extract, and almond extract. Continue to mix until a thick, cohesive dough forms.

Lightly flour a clean work surface. Transfer the dough to the floured surface and roll it out to approximately 1/2 inch thick.

Using a knife or pastry cutter, cut the rolled dough into square shapes. Carefully transfer the squares to the prepared cookie sheet, leaving a little space between each piece.

With a knife, gently carve two shallow diagonal lines from one corner to the opposite corner on the top of each square, forming an “X” pattern.

Bake the Lembas bread in the preheated oven for 12 minutes, or until the bread is set and the edges are lightly golden.
