Ingredients
For the Braised Beef Curry
- 2 pounds beef chuck roast, cut into 1 1/2-inch cubes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1 yellow onion, chopped
- 4 garlic, cloves, minced
- 1 tablespoon fresh ginger, grated
- 3 tablespoons red curry paste
- 1 canned diced tomatoes, 14.5 ounce can, undrained
- 1 full-fat coconut milk, 13.5 ounce can
- 1 1/2 cups beef broth
- 1 tablespoon fish sauce
- 1 teaspoon brown sugar
- 1 tablespoon fresh lime juice
For the Jasmine Rice
- 1 1/2 cups jasmine rice, rinsed
- 2 1/4 cups water
- 1/2 teaspoon salt
For Serving
- 1/4 cup fresh cilantro, chopped
- 1 lime, cut into wedges

Preheat your oven to 325°F. Pat the beef cubes dry with paper towels and season generously with 1 teaspoon of salt and 1/2 teaspoon of black pepper.

Heat olive oil in a large Dutch oven or oven-safe pot over medium-high heat. Sear the beef in batches until browned on all sides, about 2-3 minutes per side. Do not overcrowd the pot. Remove seared beef and set aside.

Reduce heat to medium. Add chopped yellow onion to the Dutch oven and cook until softened, about 5 minutes. Stir in minced garlic and grated ginger, cooking for another 1 minute until fragrant.
