If using block cheese, shred the cheddar and Monterey Jack cheeses. If using pre-sliced cheese, ensure slices are ready. Lay out the bread slices.

Evenly spread about 1/2 tablespoon of softened butter on one side of each bread slice. Sprinkle a tiny pinch of kosher salt over the buttered sides.

Heat a large skillet or griddle over medium heat. You want the pan to be hot enough to brown the bread, but not so hot that it burns before the cheese melts.

Place four slices of bread, butter-side down, onto the hot skillet. Evenly distribute the shredded or sliced cheddar and Monterey Jack cheeses over these four slices. Top with the remaining four slices of bread, butter-side up.

Cook for 3 to 5 minutes, or until the bottom slice is golden brown and the cheese is starting to melt. Carefully flip each sandwich and cook for another 3 to 5 minutes, or until the second side is golden brown and the cheese is fully melted and gooey.
