In a large mixing bowl, combine the 175 grams of self-raising flour and 50 grams of caster sugar for the pastry base.

Add the 100 grams of butter to the flour and sugar mixture. Using your fingertips, rub the butter into the dry ingredients until the mixture resembles fine breadcrumbs.

Add the 2 tablespoons of cold water to the mixture and mix until a cohesive dough forms. Briefly knead the dough until it comes together.

Lightly grease a round tart tin (approximately 8-9 inches in diameter). Press the prepared dough evenly into the base of the greased tart tin to form the pastry case.

Pour the red jam over the pastry base and spread it evenly to create a thin layer.

Preheat your oven to 180°C (350°F).

Bake the pastry base with the jam in the preheated oven for 15 minutes, or until the pastry is lightly golden.

While the base is baking, prepare the cornflake topping. In a saucepan over low heat, melt the 50 grams of butter, 2 tablespoons of golden syrup, and 50 grams of caster sugar. Stir continuously until the mixture is combined and fully melted.

Remove the saucepan from the heat. Add the cornflakes to the melted mixture and mix well until all the cornflakes are fully coated.

Once the 15 minutes baking time for the base is complete, carefully remove the tart from the oven.

Evenly spread the cornflake topping mixture over the jam layer in the tart.

Return the tart to the oven and bake for another 5-10 minutes, or until the topping is golden brown and slightly crispy.

Remove the Cornflake Tart from the oven and let it cool completely on a wire rack before serving. This allows the tart to set properly.
