In a large bowl, combine the softened cream cheese, softened butter, and 3 cups of confectioners' sugar. Mix these ingredients together using an electric hand mixer until well combined and smooth.

Add 2 drops of peppermint oil to the mixture.

Add 1 drop of any desired color food coloring paste, or leave the mixture white if preferred. Mix again with the electric hand mixer until the color is evenly distributed and the mixture is fully combined.

Roll the mixture into small balls, approximately 1/2 inch in diameter.
Place the small balls onto waxed paper, leaving a little space between each.

Dip a fork into confectioners' sugar to prevent sticking. Use the sugared fork to gently flatten each ball, creating a decorative pattern on top.

Let the finished mints dry for about 2 hours on the waxed paper.

After drying, transfer the mints to an airtight container and freeze or refrigerate until ready to serve.
