Preheat your oven to 350°F. Line a baking sheet with parchment paper.

In a medium mixing bowl, combine the smooth peanut butter, granulated sugar, and large egg.

Using a spatula or wooden spoon, thoroughly mix all three ingredients until they are well combined and form a cohesive dough.

Take small portions of the dough, about 1 tablespoon each, and roll them into smooth balls between your hands. Place these dough balls onto the prepared baking sheet, leaving about 2 inches between each cookie.

Using a fork, gently press down on each dough ball to flatten it slightly. Rotate the fork 90 degrees and press again to create the classic criss-cross pattern on top of each cookie.

Bake the cookies in the preheated oven for 9 to 10 minutes, or until the edges are lightly golden and the centers are just set. The cookies will be soft when they first come out of the oven.

Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. They will firm up as they cool.
