Melt 2 tablespoons of butter in a large pot over medium heat.

Add the diced yellow onion, diced carrots, and diced celery stalks to the pot. Sauté until the vegetables are softened, about 5-7 minutes.

Add the minced garlic and sauté for 1 minute until fragrant.

Stir in 1/4 cup of all-purpose flour and whisk to combine with the vegetables, cooking for 1 minute to create a roux.

Gradually whisk in 6 cups of chicken broth until the mixture is smooth and no lumps remain.

Stir in 1 cup of heavy cream.

Add 3 cups of shredded chicken to the soup.

Season the soup with 2 tablespoons of Cajun seasoning, 1 teaspoon of salt, 1/2 teaspoon of black pepper, 1 teaspoon of dried thyme, 1 teaspoon of dried parsley, and 1 bay leaf. Stir to combine all ingredients.

Bring the soup to a gentle simmer over medium-low heat. Let it continue to simmer while you prepare and bake the biscuits.

Preheat your oven according to the Red Lobster Cheddar Bay Biscuit Mix package directions.

In a separate bowl, combine the Red Lobster Cheddar Bay Biscuit Mix with 1/2 cup of shredded cheddar cheese.

Pour in 3/4 cup of milk. Mix until the ingredients are just combined; be careful not to overmix the dough.

Scoop portions of the biscuit dough onto a baking sheet lined with parchment paper.

Bake the biscuits according to the package directions until golden brown.

While the biscuits are baking, melt 1/4 cup of butter in a small microwave-safe bowl or saucepan.

Add 1/2 teaspoon of garlic powder and 1/2 teaspoon of dried parsley to the melted butter. Stir to combine.

Once the biscuits are removed from the oven and are still hot, brush the prepared topping mixture generously over them.

Remove the bay leaf from the soup before serving. Ladle the hot Cajun Chicken & Cheddar Bay Biscuit Soup into bowls and serve immediately with the freshly baked, buttered biscuits on the side.
