Pour half of the macaroni and cheese into a 9x13 inch baking dish. Layer with 1/2 cup each of extra shredded sharp cheddar, Colby Jack, Monterey Jack, and Oaxaca cheeses. Top with the remaining macaroni and cheese. Sprinkle the top with another 1/2 cup each of the four cheeses and the paprika.

Bake in the preheated oven for 20-25 minutes, or until the mac and cheese is hot and bubbly. For a crispy top, turn on the broiler and broil for 2-3 minutes, watching carefully to prevent burning.

While the mac and cheese bakes, prepare the honey BBQ mayo. In a small bowl, whisk together the mayonnaise, BBQ sauce, honey, hot sauce, apple cider vinegar, and pickle juice until smooth and well combined.

To serve, plate a generous portion of the baked mac and cheese. Pile the cooked BBQ boneless wings on top. Drizzle generously with the honey BBQ mayo and garnish with sliced green onions.
