In a large bowl, combine the chicken drumsticks/thighs with 1 tablespoon of soy sauce, 1 tablespoon of oyster sauce, 1/2 tablespoon of dark soy sauce, 1/2 tablespoon of rice vinegar, and 1 teaspoon of cornstarch. Mix well to ensure the chicken is thoroughly coated. Set aside to marinate.

Heat 2 tablespoons of oil in a large wok or deep pan over medium-high heat. Add the potato wedges and cook, stirring occasionally, until they are lightly browned and slightly softened, about 5-7 minutes. Remove the cooked potatoes from the wok and set them aside.

Add the marinated chicken to the same wok. Cook the chicken, turning occasionally, until it is partially cooked and lightly browned on all sides, about 5-7 minutes.

Add the ginger slices and spring onion whites to the wok with the chicken. Stir-fry for 1 minute until fragrant.

Return the cooked potatoes to the wok. Pour in the 500 ml of water. Then, add the remaining braising sauces: 1 tablespoon of soy sauce, 1 tablespoon of oyster sauce, 1/2 tablespoon of dark soy sauce, and 1/2 tablespoon of rice vinegar. Stir gently to combine.

Bring the liquid to a simmer, then reduce the heat to medium-low. Cover the wok and let the dish simmer for 15 minutes, or until the chicken is cooked through and the potatoes are tender.

Remove from heat and serve hot, optionally garnished with fresh chopped spring onion greens. This dish pairs excellently with steamed rice.
