Line an ice cube tray with plastic wrap, ensuring that the plastic wrap extends sufficiently over the sides of the tray to easily lift the sushi later.

Place individual slices of sushi-grade salmon and tuna into the bottom of each compartment of the lined ice cube tray. You can alternate fish types or use one per compartment.

Add slices of avocado on top of the fish in each compartment.

Drizzle spicy mayonnaise (or regular mayonnaise) into some of the compartments, on top of the avocado, for an extra layer of flavor.

Using an ice cream scoop or spoon, add cooked sushi rice into each compartment, filling the tray completely over the other ingredients.

Press down the sushi rice firmly with your fingers or the back of a spoon to compact it into the compartments and ensure a solid base.

Place small pieces of nori (seaweed) on top of the rice in some of the compartments, if desired, for added flavor and texture.

Gently press down the nori pieces into the rice.

Place a second, empty ice cube tray on top of the filled tray and press down firmly to further compact and shape the sushi pieces. This helps create uniform, well-formed sushi.

Remove the top empty ice cube tray.

Carefully pull the edges of the plastic wrap to invert and remove all the formed sushi pieces from the tray onto a flat surface, such as a wooden cutting board or serving platter.

Drizzle additional spicy mayonnaise (or regular mayonnaise) on top of each individual sushi piece for garnish and extra flavor.

Sprinkle sesame seeds over the sushi pieces as a final garnish before serving.

The sushi is now ready to be served immediately. Enjoy your homemade ice cube tray sushi!
