Preheat your oven to 400°F. Line a large baking sheet with parchment paper or a silicone baking mat for easy cleanup.

In a large bowl, toss the cubed sweet potatoes with olive oil, smoked paprika, garlic powder, salt, and black pepper until evenly coated.

Wrap each seasoned sweet potato cube with a half-slice of bacon. Secure the bacon with a toothpick if needed, though it usually holds well on its own. Arrange the wrapped bites in a single layer on the prepared baking sheet, leaving a little space between each.

Bake for 20 minutes. While the bites are baking, whisk together the pure maple syrup and cayenne pepper (if using) in a small bowl to create the glaze.

Remove the baking sheet from the oven. Brush each bacon-wrapped sweet potato bite generously with the maple glaze. Return to the oven and continue baking for another 10-15 minutes, or until the bacon is crispy and the sweet potatoes are tender.

For extra crispy bacon, you can briefly broil the bites for 1-2 minutes at the end, watching carefully to prevent burning.
