Preheat your oven to 275°F. Line a large baking sheet with parchment paper, ensuring it covers the entire surface.

Place the pre-sliced cheeses on a cutting board. Using a pizza cutter or a sharp knife, cut each slice into quarters. For the Colby Jack, this will create triangular pieces. For the Monterey Jack and cheddar, this will create square-ish pieces.

Carefully arrange the cut cheese pieces in a single layer on the prepared baking sheet. Make sure there is ample space between each piece, as they will spread significantly during baking.

For some of the square or rectangular cheese pieces (Monterey Jack and cheddar), use a straw to poke a single hole in the center of each piece. This step is optional but can add a fun visual element.

Season all the cheese pieces generously with freshly ground black pepper. If desired, lightly sprinkle with salt and/or crushed red pepper for an extra kick.

Bake the cheese crisps in the preheated oven for 20 minutes. The cheese will melt, spread out, and become golden brown and bubbly around the edges.

Once baked, remove the baking sheet from the oven. Allow the cheese crisps to cool on the parchment paper for a few minutes. As they cool, they will firm up and become perfectly crispy. Carefully peel them off the parchment paper and transfer to a serving plate.
