In a small bowl, combine the minced anchovies, 2 teaspoons of oil from the anchovy tin, mayonnaise, Dijon mustard, lemon juice and zest, and minced garlic. Season with cracked black pepper and a pinch of salt. Mix well and set aside.

In a separate bowl, combine the chicken mince with garlic powder, dried oregano, and a pinch of sea salt and pepper. Mix thoroughly until all ingredients are evenly distributed.

Lay the small tortillas flat on a clean work surface. Evenly spread the seasoned chicken mince over one side of each tortilla, creating a thin layer that covers the surface.

Heat a large non-stick pan over medium heat with a little oil. Once hot, place the tortillas chicken-side down into the pan. Cook for 3 minutes, or until the chicken is golden brown and crispy. Flip the tortillas and cook for another 1-2 minutes on the tortilla side, until crunchy and the chicken is fully cooked through. Repeat with the remaining tortillas, keeping the cooked ones warm.

In a large mixing bowl, combine the washed and chopped cos lettuce, chopped boiled eggs, chopped streaky bacon, and 40g of grated Parmesan cheese.

Spoon some of the prepared Caesar dressing over the salad ingredients in the bowl. Toss gently to ensure all components are evenly coated with the dressing.

To serve, pile a generous amount of the dressed Caesar salad onto each warm smashed chicken taco. Grate a little extra Parmesan cheese over the top of each taco before serving immediately.
