Preheat your oven to 180°C.

Remove the dark green ends from the two leeks and finely slice the white and light green parts.

Place a frying pan over medium heat and add a knob of butter. Once melted, add the sliced leeks to the pan. Cook gently for about 5 minutes until they have softened.

Add the fresh thyme leaves and stir them into the softened leeks. Then, add one tablespoon of whole grain mustard and mix well.

Remove the pan from the heat and let the leek mixture cool down slightly.

In a large mixing bowl, combine 100 grams of fresh breadcrumbs, 100 grams of grated cheddar cheese, 50 grams of plain flour, 1/2 teaspoon of baking powder, and a good pinch of salt and pepper.

Add the slightly cooled leek and mustard mixture to the bowl with the dry ingredients.

Crack one large egg into the bowl and pour in 50 ml of milk.

Mix all the ingredients together thoroughly using a spatula or your hands until everything is well combined and forms a cohesive mixture.

Lightly grease a shallow ovenproof dish.

Spoon the Glamorgan mixture into the prepared dish and gently spread it out evenly, smoothing the top.

Halve some cherry tomatoes and arrange them on top of the mixture. Sprinkle generously with more grated cheese.

Place the dish in the preheated oven and bake for 20 to 25 minutes, or until the top is golden brown and bubbling.

Remove from the oven, allow to cool slightly, and then garnish with freshly chopped parsley before serving.
