In a mixing bowl, take 1 cup semolina and 1 cup yogurt. Mix both ingredients well until they are thoroughly combined.

Gradually add 1/2 cup water and mix well to form a thick batter. Cover the bowl and let the batter rest for 15 minutes.

Heat 1 tablespoon oil in a small pan. Add 1 teaspoon mustard seeds and let them splutter.

Add 1 teaspoon urad dal and 1 teaspoon chana dal. Sauté until golden brown.

Add 1/2 teaspoon finely chopped ginger and 2 finely chopped green chilies. Sauté for a few seconds.

Add 10-12 curry leaves and 1 finely chopped onion. Sauté until the onion turns translucent.

Add the prepared tempering to the semolina-yogurt batter. Add salt to taste and mix all ingredients well.

Just before steaming, add 1 teaspoon Eno (fruit salt) to the batter. Pour 1 tablespoon water directly over the Eno to activate it.

Gently mix until the Eno is just incorporated into the batter. Do not overmix.

Grease a container (like a cake tin or deep bowl) with a little oil. Pour the prepared batter into the greased container.

Place the container in a steamer. Steam the Dahi Upma on medium heat for 15 minutes.

After 15 minutes, check by inserting a knife or toothpick in the center; it should come out clean.

Once steamed, let the Dahi Upma cool slightly in the container.

Carefully invert the Upma onto a plate. Cut it into desired shapes, such as squares.

Garnish with fresh, finely chopped cilantro. Serve hot with your favorite chutney.
