Heat 2 tablespoons of vegetable oil in a large pan or skillet over medium-high heat. Add the thinly sliced mushrooms and season with 1/2 teaspoon of salt and 1/4 teaspoon of freshly cracked black pepper.

Sauté the mushrooms, stirring occasionally, until they release their moisture and turn a nice golden brown, about 5-7 minutes.

Add the thinly sliced garlic, chopped onion, sliced bell pepper, and fresh thyme sprigs (if using) to the pan with the mushrooms. Continue to sauté for another 2-3 minutes until the vegetables soften slightly.

Stir in 1 teaspoon of light soy sauce and 1/4 teaspoon of balsamic vinegar (if using). Mix all the ingredients together well.

Create four separate spaces within the mushroom mixture in the pan. Place two slices of cheese on top of each space. Cover the pan with a lid for 30 seconds to allow the cheese to melt.

Once the cheese is melted, use a spatula to mix the melted cheese into the mushroom filling until well combined.

Take each baguette and slice it open lengthwise, being careful not to cut all the way through.

Spread 1 tablespoon of English mustard on one side of each sliced baguette and 1 tablespoon of garlic mayonnaise on the other side.

Generously spoon the prepared mushroom and cheese filling into each baguette. Close the baguette to form the sandwich and serve immediately.
