Place a skillet or cast iron pan on medium-high heat.

Add 2 tablespoons of oil, butter, or ghee to the hot pan.

Once the oil is hot, add the chopped onions and sauté until they turn translucent and lightly golden, about 5-7 minutes.

Add the chopped tomatoes and Thai green chilies to the pan. Lower the heat slightly to medium-low.

Cook for a few minutes, stirring occasionally, until the tomatoes start to break down and soften, about 3-5 minutes.

Add the red chili powder, cumin seeds, turmeric, and salt to the pan. Stir well to combine with the tomato and onion mixture.

Keep the heat low and continue to sauté the mixture until the oil separates from the masala, indicating the spices are cooked through, about 2-3 minutes.

Carefully crack the 4 eggs directly into the masala mixture. Cook for 20-30 seconds maximum so they stay soft and silky, not rubbery.

Optionally, sprinkle some cheese on top of the eggs and let it melt for a few seconds.

Transfer the Desi Eggs to a plate, top with fresh chopped cilantro, and enjoy immediately with bread, sourdough, or paratha, alongside a cup of chai or coffee.
