Line a baking sheet with parchment paper and set aside. This will be used to hold the finished turkeys as they set.

Melt the dark chocolate. Place the dark chocolate chips or chopped chocolate in a microwave-safe bowl. Microwave in 30-second intervals, stirring well after each, until smooth and fully melted. Be careful not to overheat. Set aside to cool slightly.

Attach the 'legs' to the strawberry. Carefully attach the two pretzel-marshmallow 'legs' to the sides of each strawberry, positioning them to resemble a turkey's legs. The chocolate on the pretzel will help them adhere to the strawberry. You may need to hold them in place for a few seconds until the chocolate begins to set.

Dip in dark chocolate. Holding the strawberry by its popsicle stick, fully submerge and coat the entire strawberry (including the attached pretzel legs, leaving the marshmallow tips exposed) in the melted dark chocolate. Allow any excess chocolate to drip off, then place the dipped strawberry turkey onto the prepared parchment-lined baking sheet.

While the dark chocolate is still wet, or shortly after dipping, take the melted white chocolate and dip the very tips of the pretzel-marshmallow 'legs' (the marshmallow end) into it. This creates the appearance of white turkey feet or exposed bones at the end of the drumsticks.

Set the turkeys. Transfer the baking sheet with the chocolate-dipped strawberry turkeys to the refrigerator. Allow them to chill for at least 30 minutes, or until all the chocolate has fully hardened.
