Wash the strawberries thoroughly. Remove the green stems from the strawberries.

Slice the stemmed strawberries into pieces. The size of the pieces depends on your desired jam texture.

Place the sliced strawberries into a medium-sized pot.

Add 4 ounces of unsweetened applesauce to the pot with the strawberries.

Squeeze the juice from 1/2 lemon directly into the pot with the strawberries and applesauce.

Place the pot on a stovetop over medium-high heat.

Stir the mixture in the pot with a spatula to combine the ingredients.

Bring the mixture to a rolling boil, stirring occasionally to prevent sticking.

While the mixture is boiling, use a potato masher to mash the strawberries in the pot to achieve your desired jam consistency. For a chunkier jam, mash less; for a smoother jam, mash more.

Continue to cook the mixture, stirring frequently, until it thickens into a jam-like consistency. This can take anywhere from 10-15 minutes. To test for doneness, place a small amount of jam on a chilled plate and let it sit for a minute. If it wrinkles when pushed with a spoon, it's ready.

Once the jam has reached the desired thickness, carefully pour the hot jam into a clean, heat-proof glass jar.

Allow the jam to cool completely at room temperature before serving or storing. This will allow it to set further. Once cooled, seal the jar and store in the refrigerator.
