Carefully open the 3 young coconuts. Pour out the coconut water into a separate container; it will not be used in this recipe.

Scoop out the soft young coconut meat from the shells and slice it into thin strips.

In a pan, combine the sugar, water, coconut milk, vanilla extract, and salt. Mix all the ingredients thoroughly.

Bring the mixture to a boil over medium heat.

Once boiling, add the sliced coconut strips to the pan. Mix well to ensure the coconut strips are evenly coated.

Continue cooking the mixture, stirring occasionally, until it significantly thickens and reduces. The liquid should become syrupy and coat the coconut strips. This will take approximately 15-20 minutes.

Preheat your oven to 180°C (350°F).

Once thickened, spread the cooked buko strips evenly onto a baking sheet lined with parchment paper.

Bake in the preheated oven at 180°C for 20 minutes.

After baking, remove the tray from the oven and let the buko strips cool down completely. This will take about 30 minutes.

Once cooled, carefully peel the buko strips from the parchment paper. They should be firm and chewy.
