Open the two cans of chunk chicken breast. Drain the chicken thoroughly in a colander. Rinse the chicken under running water to remove any 'cannedness'. Squeeze the juice from 1/2 lemon over the rinsed chicken. Use paper towels to press out any remaining excess fluid until the chicken is as dry as possible. Break up or 'smash' the chicken into small pieces.

Transfer the prepared chicken to a large mixing bowl. Add the two large eggs, 1 cup of grated Parmesan cheese, and 1 tablespoon of dried minced onion. Season with salt to taste.

Thoroughly mix all ingredients in the bowl until well combined and cohesive enough to form patties. Form the mixture into approximately 8 patties (about 4 patties per can of chicken).

Heat a large pan or skillet over medium heat. Add butter to the pan, ensuring enough to coat the bottom and prevent sticking, making the patties nice and buttery. Place the formed chicken patties into the hot pan and cook until they are golden brown and crispy on both sides, flipping once. This may need to be done in batches.

While the patties are cooking, prepare the sauce by mixing a small amount of mayonnaise and ground mustard in a separate small bowl until well combined.

Once the patties are cooked, assemble your no-bread sandwich. Place one chicken patty on a plate. Spread a dab of the mayonnaise-mustard sauce on top. Layer with a slice of Swiss cheese, then some pickle slices, and a few thin slices of apple. Top with another chicken patty.
