Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
In a large mixing bowl, combine the finely chopped chicken, 1/2 cup of shredded cheddar cheese, the large egg, 1/2 cup of Panko breadcrumbs, 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, 1/2 teaspoon of garlic powder, and 1/2 teaspoon of onion powder. Mix everything thoroughly until well combined.
Place the 1/4 cup of all-purpose flour in a shallow dish. Place the remaining 1/2 cup of Panko breadcrumbs in another shallow dish. Take small portions of the chicken mixture and press them into fun shapes using small cookie cutters (or form into traditional nugget shapes by hand).
Dredge each nugget first in the flour, shaking off any excess. Then, dip it into the remaining Panko breadcrumbs, pressing gently to ensure an even coating. Arrange the coated nuggets in a single layer on the prepared baking sheet. Lightly drizzle or spray the tops of the nuggets with olive oil.
Bake the nuggets for 9 minutes, then carefully flip them over. Continue baking for another 9 minutes, or until the nuggets are golden brown and cooked through (internal temperature should reach 165°F).
