In a small bowl, whisk together the honey, soy sauce, minced garlic, rice vinegar, sesame oil, salt, and black pepper to create the marinade.
Add the cubed chicken breast to the bowl with the marinade. Toss to coat evenly. Let marinate for at least 5 minutes while you prepare your cooking area. For best results, allow to marinate for up to 20 minutes if time permits.
Preheat your broiler to high. Line a small baking sheet with aluminum foil for easier cleanup.
Thread the marinated chicken cubes onto the wooden or metal skewer. Place the skewer on the prepared baking sheet.
Place the baking sheet with the skewer under the preheated broiler. Broil for 5-6 minutes per side, or until the chicken is cooked through and lightly caramelized. Baste with any remaining marinade during the last few minutes of cooking, if desired.
Carefully remove the skewer from the oven. Let the chicken rest for 2-3 minutes before serving to allow the juices to redistribute.
