In a large bowl, whisk together the whole wheat flour, protein powder, baking powder, and salt.

In a separate medium bowl, whisk together the eggs, milk, plain Greek yogurt, and vanilla extract until well combined.

Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.

Stir in the melted butter.

Cook the bacon in a skillet over medium heat until crispy. Remove bacon from the skillet and place on a paper towel-lined plate to drain. Crumble or chop the bacon once cooled.

Heat a lightly greased griddle or non-stick skillet over medium heat. For mini pancakes, use about 1 to 2 tablespoons of batter per pancake.

Pour small circles of batter onto the hot griddle. Cook for 1-2 minutes per side, or until golden brown and cooked through. Flip when bubbles start to form on the surface.

Repeat with the remaining batter, adding more butter to the griddle as needed.

Serve the mini protein pancakes warm, topped with crumbled bacon, maple syrup, fresh berries, or whipped cream as desired.
