Heat a pan on the stove over medium-high heat. Add the minced ginger, minced garlic, and the white part of the scallion stalk to the hot pan. Sauté until fragrant, about 1-2 minutes.

Add the 1/4 kg lean ground pork to the pan with the aromatics. Cook, stirring occasionally and breaking up the pork with a spoon, until the pork is browned, about 3-4 minutes.

Incorporate the 5 sliced shiitake mushrooms into the pan with the browned pork. Stir and cook for 1 minute.

In a separate bowl, combine the 2 tablespoons soy sauce, 2 tablespoons dark soy sauce, 1 tablespoon oyster sauce, 1 cup water or stock, and 4 pieces rock sugar (or 1 tablespoon regular sugar). Stir to mix well until the sugar dissolves.

Pour the mixed sauce into the pan with the pork and mushrooms. Bring the mixture to a gentle simmer.

Season the mixture with salt and pepper to taste. Adjust as needed.

Stir in the 2 chopped stalks of bok choy. Cook until the bok choy is tender-crisp, about 1-2 minutes.

If a thicker sauce is desired, add a cornstarch slurry (made by mixing 1 teaspoon cornstarch with 1 tablespoon cold water) and stir constantly until it reaches the desired consistency. Cook for another 1 minute.

Drizzle with sesame oil before serving for added aroma and flavor.

Serve the braised pork mixture hot over steamed rice.
