Prepare the tuna salad: In a medium bowl, whisk together the red wine vinegar, Dijon mustard, grated garlic clove, salt, and pepper. Add the drained tuna, diced red onion, diced green olives, diced fresh basil, and diced parsley. Toss all ingredients together until well combined. Taste and adjust seasonings as needed. Set aside to keep cool.

Toast the bread: Spread 1 to 2 teaspoons of mayonnaise in a thin, even layer on one side of each slice of bread. Place the bread slices, mayonnaise-side up, into the air fryer basket. Air fry at 400°F for 3 minutes, or until the bread is golden brown and crunchy.

Melt the cheese: Carefully flip the toasted bread slices. Top each slice with 2 to 3 slices of your chosen cheese. Return to the air fryer and continue to air fry for 90 to 120 seconds, or until the cheese is fully melted and bubbly.

Assemble the tuna melt: Pile the prepared tuna salad generously onto one of the cheese-topped bread slices. Place the 2 slices of tomato on top of the tuna salad. Season the tomato with a pinch of salt and pepper. Close the sandwich with the other cheese-topped bread slice. Serve immediately and enjoy!
