In a bowl, combine all pork marinade ingredients (excluding the 1 tablespoon of honey reserved for basting). Mix well and let the pork belly marinate for at least 30 minutes.
If you don't have day-old cooked rice, cook fresh rice while the pork is marinating. Day-old rice is recommended for fried rice.
In a pan, add 2 tablespoons of neutral oil and fry the minced garlic over medium-low heat until it starts to turn golden brown. Once golden, strain the oil into a separate bowl, reserving the crispy garlic pieces. Be careful not to over-brown the garlic in the pan, as it will continue to cook after being strained.

Once the pork has finished marinating, place the marinated pork belly pieces into an air fryer basket. Reserve the extra marinade left in the bowl. Cook the pork in the air fryer at 180°C for 20 minutes, or until fully cooked. Every 5 minutes during cooking, remove the pork and baste it with the reserved marinade mixed with 1 tablespoon of honey. Continue until the pork is glossy, brown, and crispy.

In the same pan where the garlic was fried, add the reserved garlic oil and heat it over high heat. Add the whites of the minced spring onion and stir-fry for a few seconds until they become aromatic and start to soften.

Add the cooked rice to the pan with the spring onion whites and mix thoroughly. Then, add the 1/2 teaspoon of MSG, 1/2 teaspoon of sugar, and 1 teaspoon of light soy sauce. Mix well, taste, and adjust seasonings to your preference.

Add slightly more than half of the reserved crispy garlic pieces into the fried rice and mix. Plate the garlic fried rice, then top with the air-fried sticky soy pork belly bites. Garnish with the remaining crispy garlic pieces, spring onion greens, minced chives, and an egg yolk, if desired.
