Pat the cod strips dry thoroughly with paper towels. In a shallow dish, combine the all-purpose flour, salt, and black pepper. Dredge each cod strip in the flour mixture, ensuring it's evenly coated, then shake off any excess.

Heat the olive oil in a large skillet over medium-high heat. Once the oil is shimmering, carefully add the cod strips in a single layer, being careful not to overcrowd the pan.
