In a large bowl, combine the cut chicken wings with the marinade ingredients: salt, mirin, 1 tablespoon soy sauce, 1 teaspoon dark soy sauce, and corn starch. Add 2 cloves of the sliced garlic to the chicken. Mix well to ensure all chicken pieces are coated. Let marinate for 15 minutes at room temperature.

While the chicken is marinating, prepare the sauce by whisking together 1 tablespoon soy sauce, oyster sauce, 1 teaspoon dark soy sauce, and the can of Coke in a separate bowl. Set aside.

Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium heat. Once hot, add the marinated chicken wings in a single layer, working in batches if necessary to avoid overcrowding. Pan-fry for 3 minutes on each side, until slightly golden brown.

Pour the prepared sauce mixture over the chicken in the skillet. Bring the liquid to a boil, then reduce the heat to low, cover the skillet, and simmer for 10 minutes.

Remove the lid and increase the heat to high. Continue to cook, stirring occasionally, until the sauce reduces, thickens, and becomes glossy, coating the chicken wings. This should take about 5-7 minutes. Once the sauce is reduced, remove the chicken wings from the skillet and set aside.

In the same skillet (no need to clean it), add the remaining 2 cloves of sliced garlic and the sliced ginger. Sauté over medium heat until fragrant, about 1 minute.

Add the sliced onion to the skillet and cook for 2-3 minutes until slightly softened. Return the cooked chicken wings to the skillet.

Drizzle the sesame oil over the chicken and onion, then add the fresh basil leaves. Toss everything together quickly to combine, ensuring the basil wilts slightly. Remove from heat immediately.

Serve the Taiwanese Three Cup Coke Chicken hot, garnished with extra fresh basil if desired. It pairs well with steamed rice.
